Japanese Curry
Vegan Tofu Recipe from Connie / Curry box
Ingredients (12 servings)
1 box Golden Curry - Japanese curry mix
2 lb Meat: Beef, chicken, shrimp, tofu
2 yellow onions - chopped/sauteed
4 to 6 stalks of celery - chopped
4 to 6 carrot sticks - chopped (not peeled)
4 or 5 potatoes - chopped (may or may not peeled; yes for russet and no for yellow potatoes)
2 or 3 bell peppers (yellow, red or green)
1 or 2 squash
5 to 10 mushrooms
2 Tbs cooking oil
5 Cups water
Instructions
Stir fry meat and veggies with oil in skillet over medium heat for approximatley 5 mins.

include potatoes in Sautee step
wait with bell peppers, mushrooms and squash until later
Add water and curry mix, then bring to a boil for approx 15 mins
Turn off heat, then add peppers and squash - stir until completely mixed with curry
serve over rice (or noodles)
