Ingredients
1 cup flour (155 g)
1 1/2 tsp sugar
1/2 tsp baking powder
1/4 tsp salt
2 large eggs, separated
1 cup whole milk
2 TBS unsalted butter, melted
1/2 tsp pure vanilla extract
Instructions for Vanilla batter
Step 1: In a large bowl, whisk together the flour, sugar, baking powder and salt.
Step 2: In a small bowl, lightly whisk the egg yolks, then whisk in the milk, melted butter and vanilla extract. Add the yolk mixture to the flour mixture and, using a wooden spoon, stir until well blended. Batter will be lumpy.
Step 3: In a clean bowl, using an electrix mixer on high speed, beat the eg whites until stiff, but not dry (peaks should form). Using a rubber spatula, fold about 1/3 of the egg whites into the batter to lighten it. Thenfold in the rest just until no white streaks remain. Use the batter right away.
Makes batter for 21 pancakes
Notes
milk can be substituted 1:1 for almond milk (or other nut based milks)
If you don't have yogurt (or sour cream or butter milk will all work), then you can substitute another 1 cup of milk mixed with 1 Tbs lemon juice or vinegar.
