Pizzelles

Ingredients
1-3/4 Cup Flour
3/4 Cup Sugar
2 tsp Baking powder
1 stick butter
2 eggs
2 Tbs Milk
2 tsp Vanilla
1/2 tsp anise seed
Frosting (optional)
Powdered Sugar
Instructions
Melt butter and set aside
Beat eggs and sugar until light yellow (2-3 minutes)
Add melted butter and vanilla; beat until blended together
Sift together 1 cup of the flour and the baking powder in a mixing bowl
Add in wet ingredients
Fold together until just blended; add remaining flour and fold together until just incorporated
Heat pizzelle iron, placing approx 2 Tbs of batter on the center of the pattern. Bake until golden brown, about 1:20 - 2:00 mins. Remove and cool on a rack or other flat surface. Repeat until batter is gone.
Frosting
Sprinkle powdered sugar
Options
Citrus: replace vanilla and anise flavorings with 1 tsp finely graded lemon/orange/lime zest
Chocolate: replace vanilla and anise flavorings with 3 Tbs cocoa and 3 Tsp sugar
Almond: replace vanilla and anise flavoring with 1 Tbs almond extract or 2 Tbs Amaretto. Add 1 Cup of finely shopped/ground almonds to the batter.
